Buck’s Ice Cream

Buck’s Ice Cream is part of the College of Agriculture, Food and Natural Resources. It opened in 1989 thanks to an endowment from Mizzou alumni Wendell and Ruth Arbuckle. Behind the cheery storefront is an integrated research, teaching and service-oriented laboratory where food science students learn everything about ice cream from maintenance and inventory to manufacturing and retail.

Buck’s signature flavor, Tiger Stripe, debuted in 1989. It was developed through research efforts led by Robert “Bob” Marshall, former Arbuckle Professor Emeritus, who wanted an ice cream unique to Mizzou. Tiger Stripe is a blend of French vanilla with a Dutch chocolate swirl.
