In general, lowercase committee names. 

• Uppercase only if the committee has a proper name: Faculty-Alumni Awards Committee.
• Lowercase on second reference or for more generic names: awards committee.

Note that a committee is an it, not a they; it takes singular verbs.

Example: He serves on the employee engagement committee. In its meeting, the employee engagement committee decided to host a luncheon.
